The Polish term Pierogi is actually a plural term, but you might often hear them referred to as pierogies. The English term Pierogies is technically incorrect, as it highlights the fact that there’s more than one, which Pierogi already means.

What is a Pierogi?

Perhaps we should stop a moment before we jump into the Pierogi taco shell recipe and all the deliciousness that will follow. Let’s first take a look at what is a Pierogi? A Pierogi is a type of Polish dumpling that is often filled with a potato and cheese mixture then boiled as a way of cooking.They are then pan-fried before serving, making them a delicious dumplings dish that can be served pan-fried, or along with a sauce.

What You’ll Need

Below we are going to go over a recipe for Pierogi taco shells, keep in mind that you can stuff those taco shells with anything you like. Let’s first look at the ingredients you will need for the dough, followed by our suggested filling ideas for more of a Polish version.

How To Make It

First, start with the dough…

Into a mixing bowl add your flour and salt and then create a well into the center of your mixture. Add your oil and eggs into the hole in the center of your mixture and mix in with a fork. Then slowly pour your water, and slowly knead until the dough forms a ball.

Your dough will be very sticky. Roll the dough out onto a floured surface, and continue kneading until the dough is no longer sticky but soft. This may take about five minutes. Cover the dough with your mixing bowl and let it rest for 30 minutes to 1 hour.

Form the dough…

Take your dough and divide it intosixpieces. Roll your dough out onto a lightly floured surface and shape your dough so that it forms your taco shapes. You want the dough to be approximately ¼ inch thick, and 5 to 6 inches across.

Cook the dough…

Take a large pot and fill it half way with water, adding a pinch of salt to your water. Bring the pot of water to a boil. Once boiling, add your formed Pierogi dough, boil until the dough floats, then boil for 2-3 more minutes. Remove the dough from the water and place it into a lightly oiled frying pan. Fry the dough for 1-3 minutes, over medium-low heat, just until it turns a golden-brown color. Remove them from the pan and allow them to cool on a paper towel-lined pan.

Prepare your taco filling…

To prepare your taco filling, place your potatoes that have been washed and diced into a skillet. Sauté over medium-low heat in a drizzle of oil until they become soft. Add your sliced sausage and diced onion. Cook until your sausage has been fully cooked, and your onions become translucent.

Prepare your cold fillings…

Wash and shred or finely dice your cabbage and shred your cheese. Set your ingredients aside until your shells and hot fillings are done.

Assemble your tacos…

Once all of your components are prepared, assemble your tacos by first taking your Pierogi taco shells, and adding a scoop of your fillings, then add your shredded cabbage and shredded cheese to the top. Finish off with a dollop of sour cream if desired then serve and enjoy.

Pierogi Dough

2 cups all-purpose flour

1 large egg

½ cup water, lukewarm

½ tsp salt

2 tsp oil

Pierogi Filling

12 oz sausage

1 medium onion, diced

½ cabbage

6 small potatoes

1½ cup cheese, shredded

Instructions

Making the Pierogi dough taco shells

Into the mixing bowl add flour and salt, then create a well in the center and add your oil and eggs. Toss with a fork to mix then slowly mix in your water while kneading the dough. Form into a sticky ball, then roll out onto a floured surface. Knead the dough until it is soft but not sticky any longer. Cover with a bowl and allow to rest for one hour or 30 minutes at a minimum.

Divide your dough into approximatelysixsections and roll them out so that your dough is about 5 to 6 inches across, and ¼ inch thick.

Fill a pot halfway with water and bring it to a boil. Add a pinch of salt to the water then place your shaped dough into the boiling water. Boil until it begins to flow then continue boiling for 2 to 3 minutes.

Place a medium-size skillet over medium-low heat and add a drizzle of oil to cover the bottom. Remove your dough from the boiling water and place it into the skillet. Cook until your Pierogi dough is golden brown on each side. Then remove and place into a paper towel and allow the oil to drain. Place in a warm location to keep shells warm.

Prepare the taco filling

Now it’s time to prepare your taco filling. Wash and clean your potatoes then dice them into bite-size pieces. Place your potatoes into a skillet and drizzle the oil. Cook over medium-low heat covered until they begin to get soft.

Slice and dice your sausage and onions. After potatoes are soft, add your sausage and onions to the same skillet and cook until your sausage turns golden brown, and you are onions become translucent.

Put it all together!

Now, take your tacos and add your hot filling to each taco, then add your diced cabbage and top with shredded cheese. If desired add a dollop of sour cream to each taco, then serve right away and enjoy.
