The ultimate Korean Street Food sandwich! Once you make this Gilgeori Toast and realise how simple and delicious it is, you'll never go back to boring sandwiches.

What is Gilgeori Toast?

This mouth-watering sandwich is a classic Korean street food filled with a veggie omelette, and topped with cheese, sugar (it works, I promise), ketchup, and a few extra shavings of cabbage.

The Bread

The most important element in terms of bread is that it’s thick in slice size, and square. Traditionally, the filling protrudes from the slices of bread, making it a pleasurable challenge to eat. Nevertheless, in order to sustain the weight and power of the filling, you’ll need two pieces of bread around 3cm thick.

Now that we’ve got that sorted, we can move onto the type of bread. Many Korean street food vendors make their sandwiches with milk bread. However, you can also use multi-grain bread or plain white bread. For this recipe, I used a white bloomer bread that had been pre-sliced into thick chunks…ideal for Gilgeori Toast!

The Filling

Oooof, now for the good bit! This is a very simple recipe, one that you could make again and again…and again. Here are the ingredients:

  • Cabbage
  • Onion
  • Carrot
  • Spring onion
  • Eggs

There are a number of variations to this dish. Some recipes have just cabbage and onion, some have more eggs to make the filling more of an omelette, some have fewer eggs to make it more veg-based. It’s totally up to you and your preferences.

All you really need to do is to chop up your veg into thin slices…or shredded!

Let’s Get Cooking

Ideally, you’d cook this on a huge square frying pan so you can fry your bread on one half of the pan. However, like most of you I expect, I only have a medium sized circular frying pan.

So, lather up your frying pan with butter or margarine. Pour in your egg mixture and shape it into a square (a bit larger than the size of your bread). Fry on one size (on medium heat) for around 5 minutes and then flip over onto the other side. Fry for a further 4 minutes and then place on your slices of cheese, teaspoon of sugar, and a squirt of ketchup. Remove from the pan and keep warm.

Add some more butter to the pan and place in your pieces of bread. Fry for 2 minutes on each side and then you’re ready to get serving!

Serving Gilgeori Toast

First, lay down one slice of fried bread on your plate. Then, gently place down your Gilgeori omelette filling. Optionally, sprinkle with some more shreddings of cabbage.

Finally, seal the sandwich with your second slice of fried bread. Press down with your hand to unify the Korean toast, and bam, you’ve got yourself an insanely delicious sandwich.

Ingredients

  • 2 slices of thick bread (milk bread, white bread...)
  • 2 ½ tbsp grated white cabbage
  • 1 onion, finely sliced
  • ½ carrot, finely sliced
  • 1 spring onion, finely sliced
  • 2 eggs
  • 1 tsp sugar
  • 4 slices of square cheese (burger cheese)
  • Ketchup
  • Butter/margarine

Instructions

  • In a bowl, combine your sliced onions, carrots, spring onions, 2 tablespoon cabbage, and 2 eggs. Combine with chopsticks and then set aside.

  • In a large frying pan, add a knob of butter and turn up to medium heat.

  • Gently pour in your veggie egg mixture and form it into a square with a spatula (you want the omelette to be just a bit bigger than the size of your bread slices).

  • Fry the omelette on one side for 4 to 5 minutes and then flip over to the other side and fry for a further 4 minutes.

  • Place the cheese on top of the omelette and then sprinkle over the teaspoon of sugar. Squirt over some ketchup and then remove from the pan. Make sure to keep warm.

  • Add some more butter into the pan and then place in your bread.

  • Fry for 2 minutes on each side or until golden.

  • Assemble your Gilgeori Toast by placing one piece of bread on a plate, then your omelette, the leftover ½ tablespoon of cabbage, and the second slide of fried bread. Then, serve up and enjoy!
