Slow Cooker Strawberries & Cream Oatmeal

Strawberry season is one of my favorite times of year. Growing up in Southern California there were always roadside stands selling fresh from the field strawberries that you could buy by the flat for amazing prices.

Now I have moved far far away to Wyoming where the strawberries in the grocery store are really expensive and to be honest not all that great flavor-wise.

But I do grow a few strawberry plants in my garden that yields a handful or two of fresh berries (if I can get to them before the birds and kids do!) and in June and July some growers from Colorado come up and set up a roadside stand and I buy a flat or two of fresh summer strawberries to make strawberry jam, strawberry ice cream and then the rest we eat fresh or pop into recipes like this slow cooker strawberry and cream oatmeal.

I love that this healthy recipe takes but a few minutes to prepare. A little measuring and dicing of some fresh strawberries, toss everything in the slow cooker right before bed and let it cook while you sleep.

(Don’t worry there is an option to cook it faster on HIGH heat too if you don’t want to cook while sleeping. Some folks don’t feel safe about that. So I want to give you guys some options!)

Wake up, spoon into bowls and let everyone sweeten their oatmeal however they like (I use Splenda to keep the calories down) and add some more diced fresh berries to the top.

YUM.

And if you are lactose intolerant or allergic to dairy, don’t worry because this recipe can easily be made dairy free by using your favorite unsweetened/unflavored dairy-free milk and some dairy free Greek yogurt.

Frequently Asked Questions

Can I Use Other Berries In This Recipe?

This recipe is great with just about any other type of berry. Try substituting blueberries, raspberries or blackberries for the strawberries for a great twist on this recipe. If you are using blueberries you can just put them in the slow cooker whole. For raspberries or blackberries you may want to mash the berries up a little bit.

You can also use stone fruits such as cherries (pitted and chopped), peaches, nectarines or plums (sliced) too!

Can I Use Frozen Fruit Instead Of Fresh Fruit?

While I think fresh berries are tastier when they are in season over frozen fruit you can totally use frozen fruit. In fact if you grow your own berries and freeze them yourself this is a great recipe for enjoying the fruits of your labor (pun intended) all year around.

Can Leftover Oatmeal Be Reheated?

If you have leftover Strawberry u0026 Cream oatmeal and want to eat it for breakfast on another day of the week you can easily reheat the oatmeal in the microwave or on the stove-top. In fact, I like to meal prep oatmeal by cooking it, putting it in meal prep bowls, and popping into the refrigerator. Then I have breakfast all ready to heat and eat for the whole week. To reheat I add a splash of water to the bowl of cold oatmeal, give it a quick stir and pop the bowl into the microwave for about a minute or two until hot. Then I top with fresh berries and add a little sweetener.

Notes

*Dairy Free Note - This recipe can easily be made dairy free if you are allergic or intolerant to dairy products. Any kind of unsweetened and unflavored dairy-free milk such as almond milk, coconut milk, soy milk, oat milk, hemp milk, etc can be used in replacement of the 2 cups of milk. To replace the Greek yogurt look for dairy-free Greek Yogurt in the yogurt section of the grocery store. **Sweetener Note - The nutritional information for this recipe (including calories, sugar and Weight Watchers SmartPoints) have been calculated based on the recipe as written with no additional sweeteners added. However, you may wish to make your strawberries and cream oatmeal a little bit sweeter to suit your own tastes and liking. You can sweeten this recipe with granulated sugar, honey, maple syrup or a zero calorie sweetener of your choice such as Stevia, Splenda, Monk Fruit, etc. If you use honey or sugar however you will need to calculate those calories and grams of sugar on your own. Personally, I use Splenda as it is easily available, tastes good to me and helps me keep within my SmartPoints range as I am doing the Weight Watchers program. ***Non-Stick Note - To make clean up easier you may wish to either line your slow cooker with a slow cooker liner or spray with non-stick cooking spray.
